Place cream cheese on the counter to soften for about 20 minutes before preparation time.
Prepare a 13 x 9 inch baking sheet by lightly applying cooking spray and then set it aside until needed.
Preheat your oven to 325 degrees Fahrenheit.
Using a medium size saucepan over a very low heat you will add the chocolate chips and butter or margarine and then stir continually, while melting until smooth in texture. Stir in the graham cracker crumbs until thoroughly combined.
Reserve ¼ cup of this chocolate graham cracker mixture for garnish and then set aside until needed.
Press the remaining chocolate graham cracker dough evenly onto the prepared 13 x 9 inch baking sheet and then set aside until needed.
Using a large mixing bowl and an electric mixer you will add the softened cream cheese. Beat until smooth and creamy and then gradually add the sweetened condensed milk. Continue beating and then add the egg and vanilla flavoring. Pour this batter into the prepared chocolate graham cracker crust.
Sprinkle the reserved chocolate graham cracker mixture evenly over the top and then place in the oven. Bake the dessert appetizers for about 25 to 30 minutes or until the middle is set. You can check for doneness using the toothpick method.
